Doug’s Nuevo Latino Tasting Menu

Chef Douglas Rodriguez prepared a nice peek into Nuevo Latino cuisine last week on his visit to Bogotá. The highlights were the three ceviches and dessert. This was the tasting menu from Friday night’s Nuevo Latino menu:

TRIO OF CEVICHES

Lobster – with ginger, leche de tigre, serrano ham and roasted corn

Hamashi – with lime juice, juzu dried seaweed, sesame oil and glazed with teriyaki

Rainbow – combination of tuna, salmon and white fish marinated in lime juice, white soy and served with sweet potato

SALADS

Duck Salad – Boston lettuce, radish, edamame, feta cheese, shredded duck with guava vinagrette

Crunchy Cuban Salad – chayote, jicama, cucumber and radish with crab, lemon oil, mint, cilantro and a pepper reduction vinagrette

STARTER

Tuna Tacos – fresh smoked tuna in a mini-malanga tortilla with toasted sweet onion

MAIN DISH

Shrimp Chicharron – mini-shrimp breaded and fried tossed in an ají panka sauce

Salmon marinated in panela and rum – served over a bed of creamy quinoa

DESSERT

Chocolate Cigars – with tuille and pastillage matchbook. The cigar box was filled with cigar smoke which literally smoked the chocolate cigars giving them a nice flavor. Great table presentation.

    Sounds like it was good times. Nice to see Chef Rodriguez making a visit to Bogota. I’m actually coming to town in a few weeks also. Any new restaurant suggestions for lunch and dinner would be very welcomed. Can’t wait to come down.
